Redcurrant Glazed Chicken Bites  HT  PFC 30mins



Makes approx. 40 Appetizers    Hot   Poultry  Herbs  Fruit  Spices  Party Food   Parties  Buffet   Appetizer



450g/1lb Minced Chicken

1 Egg, beaten

teasp Ground Coriander

2 teasp Freshly chopped Chives

50g/2oz Stale White Breadcrumbs

teasp Five Spice Powder (optional)

For the Glaze

120ml/4fl.oz. Redcurrant Jelly

120ml/4fl.oz. Mango Chutney

2 teasp Lemon Juice




1. Preheat the oven to 200C, 400F, Gas Mark 6 and line a baking tray with parchment paper.

2.. In a large bowl mix together the chicken, egg, spices, chives and breadcrumbs until well blended. 

3. Shape tablespoons of the mixture into balls and place on the baking tray. Bake for 15 minutes.

4. Meanwhile place the glaze ingredients in a saucepan and heat gently, stirring constantly until hot and well combined. 

5. To serve - add the cooked chicken bites to the pan containing the glaze and simmer for 2-3 minutes or until lightly coated.

These can be prepared a day ahead. Cover the uncooked balls and refrigerate until required.
