Crusted Basil Frankfurters Recipe HT

3 Jumbo Frankfurters
Plain flour for coating
2 Eggs, beaten
100g/4oz Freshly grated Parmesan Cheese
2 tbsp Freshly chopped Parsley
2 tbsp Freshly chopped Basil
Freshly Ground Black Pepper
In a bowl, mix together the cheese parsley, basil and pepper.
Cut the frankfurters diagonally into 1cm/½
inch slices then toss in the flour, shaking
off any excess flour.
Dip each slice into the beaten eggs, then into the cheese mixture pressing the
mixture firmly onto the frankfurter slices. Cover and refrigerate for 15 minutes.
Preheat the oil to 180C, 350F. Deep-fry the frankfurter slices for a few minutes
until golden brown. Serve immediately.
can be prepared 2 days ahead. Make to stage 4, cover and refrigerate the coated,
uncooked slices until required.
