450g/1lb Cold Vegetarian Sweets
Gluten Wheat Free Eggless
400g/14 oz Sugar
1 teasp Vanilla Extract
1. Lightly grease
an 18cm /7 inch square baking tin with butter and set aside.
2. Place the
sugar, milk and butter in a large saucepan and heat gently until the sugar has
completely dissolved, stirring from time to time.
3. Once the sugar
as dissolved, bring to the boil and continue to boil, stirring constantly,
until the mixture reaches the 'soft ball' stage. You can test this by dropping a
small amount into a cup of cold water. The correct stage is reached when it
cools into a soft ball.
4. Remove from the
heat, stir in the vanilla essence, then beat with a wooden spoon until it

greased tin and set aside. When it has nearly set, mark the surface into
squares with a knife. Once completely set, cut into squares.
