A Weekday Menu Recipe
Lamb and Courgette
HT MC 45mins
Serves 4 Hot Lamb
Vegetables Pasta Main Course Middle Eastern
Garlic Cloves, chopped finely
tbsp Olive Oil
teasp Ground Cinnamon
x 400g/14oz tin Chopped Tomatoes
Courgettes, ( Zucchini )sliced
Pasta e.g. spirals or shells
Fresh Parmesan Cheese, grated
and Black Pepper
Preheat the oven to 200C, 400F, Gas mark 6 and grease a 1.1 L/2pint ovenproof
Heat the oil in a frying pan, add the onion and garlic and sauté for 5 minutes.
Add the spices and cook for 1 minute then add
the lamb and cook for a further 5 minutes.
Add the tomatoes, courgettes salt and pepper and simmer for 10 minutes.
Meanwhile, cook the pasta in boiling salted water, according to the packet
instructions. Drain well.
Mix the pasta with the meat mixture and transfer to the ovenproof dish.
Sprinkle with the grated parmesan then bake in
the oven for 15 minutes.
To serve - preheat the grill to hot, remove the lamb from the oven and brown
under the grill for 2-3 minutes. Serve
