Gorgonzola and Roquefort Cheese Recipes

Gorgonzola is an Italian semi-soft blue cheese made from cows' milk. The creamy colour indicative of a creamy taste is interspersed with  greenish-blue penicillin mould which  gives the cheese a  sharp flavour. At around four weeks the cheeses are pierced with thick needles to encourage the spread of the mould.  Its base colour ranges from white to yellow and the taste ranges from mild to sharp, depending on how aged the cheese is. An excellent cheese for both eating and cooking.

Roqufort  is a French semi-hard ewe's milk cheese which is ranked among the best of Blue cheeses in the world. It has a creamy white colour containing deep blue pockets and a burnt-orange skin which is best removed before eating.  The cylindrical cheeses are naturally ripened in limestone caverns found under the village of Roquefort-sur-Soulzon with the aid of “Penicillium roqueforti”.  The flesh is slightly crumbly with a strong metallic taste of the blue mold.  An excellent cheese both for cooking and eating.
