Summer Prawn Stir Fry
Hot Shellfish Seafood Vegetables Fruit Herbs Main Course Dairy
175g/6oz Raw Prawns, shelled
1 Garlic Clove, crushed
1 Red Chilli, deseeded and finely chopped
The Juice of 1 Orange
The Juice 2 Limes
2 tbsp Soy Sauce
1-2 tbsp Groundnut Oil
100g/4oz Baby Sweetcorn, halved lengthways
100g/4oz Mange Tout
100g/4oz Baby Carrots, halved lengthways
100g/4oz Broccoli Florets
1 tbsp Freshly Chopped Coriander
the prawns, garlic, chilli, orange and lemon and soy sauce in a mixing bowl and
the oil a large wok or frying pan until very hot then add the vegetables and
stir-fry for a 3-5 minutes.
3. Add the
prawn mixture including the juices and continue to stir-fry for a few minutes
until the prawns turn pink and are cooked through.
Sprinkle with the chopped coriander, turn to mix briefly then serve immediately.
