Salmon and Watercress Flan

50g/2oz Watercress, roughly chopped
175g/6oz Fresh Cooked Salmon, flaked
2 large Eggs
210ml/7fl.oz. Crème Fraîche
Salt and Black pepper
Preheat the oven to 190C, 375F, Gas mark 5. Line a 20cm/8 inch flan tin with the
pastry. Prick the base with a fork and line with
greaseproof paper, fill with baking beans and
bake for 15 minutes.
2. Remove the flan case from the oven and take out the beans and paper.
3. Spread the watercress evenly over the bottom of the
flan case then place the flaked salmon evenly over the watercress.
4. Beat the eggs and crème fraîche together in a mixing bowl, season with
salt and black pepper then pour the mixture over the salmon and bake for
30 mins until just set.
