Salmon Pesto Quiche  HT  CD  MC  45mins

Serves 4      Hot   Cold  Fish  Vegetables   Savoury  Flans  Tarts   Main Course 

 

Ingredients

200g/7oz Shortcrust Pastry

2 x 200g/7oz tins Salmon, drained
250g/8oz Mascarpone Cheese
2 Eggs
2 tbsp Pesto
25g/1oz Grated Cheese
Salt and Black pepper
 

 

Instructions

 

1. Preheat the oven to 190C, 375F, Gas mark 5. Line a 20cm/8 inch flan tin with the pastry. Prick the base with a fork and line with greaseproof paper, fill with baking beans and bake for 15 minutes.

 

2. Remove the flan case from the oven and take out the beans and paper.

 

3. Mix together the salmon, pesto, mascarpone and eggs in a mixing bowl, season with salt and pepper then pour into the flan case and bake for 15 minutes.

 

4. Remove from the oven, sprinkle with the grated cheese and continue to bake for a further 10 minutes until golden and set.
