4 Hot Fish Herbs Main Course England British
4 heaped tbsp
1 tbsp freshly chopped Parsley
1 tbsp freshly chopped Thyme
1 tbsp freshly
2 Large Tomatoes, finely chopped
50g/2oz pitted Black Olives, finely chopped
Salt and Black
4 x 150g /+5oz Trout Fillets
2 tbsp Olive Oil
1. Preheat the oven to 200C, 400F, Gas 6 and lightly oil a large baking tray.
2. Place the
breadcrumbs in a large mixing bowl together with the herbs, tomatoes and olives.
Season with salt and pepper and mix well.
3. Arrange the fish fillets on the oiled baking tray breadcrumb mixture on top
of each. Drizzle with oil and bake for 15-20 minutes until golden brown and
crunchy. Serve immediately.
