Sea Bass with Anchovy Dressing HT

Garlic Cloves, finely chopped
Anchovy Fillets, drained and chopped
Tbsp freshly chopped Oregano
and Black Pepper
x 200g/7oz Sea Bass Fillets
Preheat the grill to medium hot and line the grill pan with aluminium foil. Heat
the oil in a small saucepan then add the garlic and sauté for 1-2 minutes.
Add the anchovies and cook, stirring for 2-3 minutes, until the anchovies
Remove the pan from the heat, allow to cool a little then stir in the vinegar,
oregano, salt and pepper.
Place the fish fillets in the grill pan and brush each fillet with a teaspoon of
the anchovy mixture. Cook under the grill for 4 minutes each side, brushing with
more of the anchovy mixture during cooking. Serve immediately with any remaining
anchovy dressing drizzled over the top.
