Steamed Snowdon Pudding HT DP Welsh    100mins

 

 

Serves 6     Hot  Dried Fruit  Dessert   Puddings  Wales  British  Europe

 

 

Ingredients:

   225g/8oz Suet

   25g/1oz Cornflour

   225g/8oz Fresh Breadcrumbs

   175g/6oz Lemon Marmalade

   A pinch of Salt

   6 Eggs, beaten

   175g/6oz Brown Sugar

   100g/4oz Raisins

   Grated rind of 2 Lemons

 

 

Instructions

 

1. In a large mixing bowl, mix together all the dry ingredients (reserving a handful of raisins).

 

2. Add the eggs and beat until well blended.

 

3. Well grease a pudding basing with butter and spread the reserved raisins over the bottom.

 

4. Pour the pudding mixture into the basin, cover with a large round of lightly buttered parchment paper or foil, securing with string, and boil for 1 hours.

           

Serve hot with white sauce.
