Place the tapioca into a saucepan with the milk, evaporated milk, sugar and the vanilla pod. Bring to the boil, stirring
constantly, then simmer for about 30 minutes,
stirring frequently, until thick and creamy.
To serve - remove the vanilla pod, transfer the tapioca to a warmed serving dish and serve immediately with jam sauce.
