900g/2lb Plums, halved and stoned
The Juice and
grated zest of 1 Orange
200g/7oz Plain Flour
50g/2oz toasted Hazelnuts, chopped
1. Pre-heat oven to 200C, 400F, Gas Mark 6. Place the plums, water, honey,
orange juice and zest in a saucepan, bring to the boil then reduce the heat and
simmer, uncovered, for 15 minutes.
2. Meanwhile, in a
large mixing bowl, rub the butter into flour with your fingertips until
the mixture resembles fine breadcrumbs.
3. Stir in sugar
and hazelnuts, mixing well.
4. At the end of
the cooking time, transfer the plums to an ovenproof gratin dish and sprinkle
the crumble mixture evenly over the top. Bake for 35-40 minutes until golden.
Serve hot with custard.
