Pork Vegetables Alcohol

1 tbsp Vegetable Oil
1 Onion, finely chopped
1 Red Capsicum (sweet pepper), deseeded
400g/14oz Pork Fillet, cut into thin 5cm/2 inch strips
100g/4oz tinned Water Chestnuts, drained
1 Red Chilli
1 teasp Cornflour
1 tbsp Soy Sauce
1 tbsp Medium Dry sherry
Heat the oil in large frying-pan, add the onion and capsicum and stir-fry over
a high heat for 3 minutes.
Add the pork and stir-fry for a further 3 minutes then add the water chestnuts and
whole chili, and cook for 2 minutes.
Meanwhile, blend the cornflour with the soy sauce, sherry and black pepper and
stir it into the
pork mixture. Stir-fry for a
further 2 minutes.
To serve - transfer to a warmed serving dish, remove the chili and serve immediately.
