Sultana and Walnut Biscuits  Veg  CD  CBF English 25mins



Makes 20      Cold   Vegetarian  Fruit  Nuts  Cookies Baked Fayre  England Britain British  Europe  



   75g/3oz Soft Butter

   50g/2oz Caster Sugar

   50g/2oz Soft Brown Sugar

   A few drops of Vanilla Essence

   1 Egg, beaten

   175g/6oz Self Raising Flour

   1 teasp Mace

   75g/3oz Sultanas

   75g/3oz Roughly chopped Walnuts




1. Preheat the oven to 180C, 350F, Gas Mark 4 and grease 2 or 3 baking sheets or line them with parchment paper.


2. In a large mixing bowl,  cream together the butter, sugars and vanilla essence until light and fluffy, then gradually beat in the egg.


3. Mix together the mace and flour, then fold into the creamed butter mixture. Stir in the sultanas and walnuts and mix well to evenly distribute.


4. Place spoonfuls of the mixture onto baking sheets, spacing well apart and bake in the oven for 12-15 minutes till golden brown. Cool on a wire rack before serving.

Beat To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
