Preheat the oven to 180C, 350F, Gas mark 4 and well grease a baking sheet. In a large mixing bowl, cream together the sugar
and butter until pale and smooth, then
add the flour, egg yolk and cinnamon and mix well.
Spread the mixture thinly onto the baking sheet and brush the top with the lightly beaten egg white. Top with the pecan
nuts, distributing evenly and bake in the
oven for 15 minutes until golden brown.
Cut into squares whilst still hot. Wait for a while then remove from the baking sheet and cool on wire racks.
