Preheat the oven to 180C, 350F, Gas mark 4 and lightly grease 2-3 baking sheets.
In a large mixing bowl, cream together the butter and sugars until smooth then beat in the egg, peanut butter, salt and
bicarbonate of soda.
Add the Vanilla essence and flour and mix well. Roll the dough into small balls and place well space apart, on the baking
sheets and flatten each one with a fork.
Bake in the oven 12-15 minutes until golden brown on top and slightly browned around the edges.
