Cheese Shortcrust Pastry Recipe

This well flavoured cheese shortcrust pastry is a suitable substitute for ordinary shortcrust pastry in many savoury recipes such as quiches  or flans.

            Makes approx 225g/8oz      Cold Hot Savoury Pastry Pastries Baked Fayre Vegetarian Eggless



100g/4oz Plain Flour

50g/2oz Butter

50g/2oz Grated Cheddar or Parmesan


Cayenne Pepper

Water to mix



1.  1. In a large mixing bowl, rub the butter into the flour using your fingertips until it resembles breadcrumbs.


2. Stir in the cheese, salt and cayenne pepper, mix very well,  then add enough water to bind to a softish dough.

3. Cover with clingfilm and refrigerate until required.


Serving Suggestions

Use for savoury flans or quiches

Use to make cheese biscuits

Rub in -  The incorporation of fat into flour.  Butter is softened and cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles fine breadcrumbs in appearance.
