12 Cold Vegetarian Fruit Cakes Baked Fayre
Wholemeal Bread Flour
tbsp Baking Powder
teasp Lemon Juice
Preheat the oven to 200C, 400F, Gas mark 6 and lightly oil a 12 hole deep muffin tin.
Mix together the flours, baking powder, salt and sugar in a mixing bowl.
In a jug combine the egg, milk, lemon juice
and oil then make a well in the centre of
the dry ingredients and then quickly mix in the liquid until all the ingredients are almost combined.
Add the blueberries and quickly mix in : try not to over-mix.
Fill the muffin tin holes 2/3rds full with the mixture and bake in the oven for 30 - 35 minutes.
Cool on wire racks.
