100g/4oz  Butter, softened
75g/3oz Cream Cheese
125g/-5oz  Plain Flour
300g/11oz Fruit Jam
75g/3oz Caster Sugar
1/2 level teasp Ground Cinnamon


1 . Cream butter and cream cheese together in a large mixing bowl until well blended and smooth.


2.  Add the flour and beat well.


3. Shape the dough into a smooth ball, wrap in clingfilm, and chill the the fridge for 8 hours.

4.  Remove dough from refrigerator 20 minutes before using. Preheat the oven to 190C, 375F, Gas Mark 5.

5. Lightly flour a work surface and roll the dough out  to 6mm/1/4-inch thickness. Cut into circles using a 7.5cm/3-inch biscuit cutter. 


6. Place a small spoonful of jam in centre of each round, moisten edges with water then fold over to form a half circle and press the edges together. 


7. Place on ungreased baking sheets and bake for 15 to 20 minutes. 


8. Remove from the oven and immediately roll in the sugar mixed with cinnamon.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
