3 loaves Cold Vegetarian Dried Fruit Bread Cakes Baked Fayre New Year
480ml/16fl.oz. Warm Water
1 tbsp Dry Yeast
60ml/2fl.oz. Vegetable Oil
850g/28oz Plain Flour
1 tbsp coarse kosher Salt
1 Egg, beaten
Pour warm water into a large mixing bowl, stir in yeast and then add eggs, oil,
honey and raisins. Mix well and add about half of the flour. Stir well then set
aside for 1 hour until the yeast is bubbly.
Add the salt and most of the remaining flour. Mix well then turn onto a lightly
floured surface and knead until the dough is soft and elastic. Divide dough,
shape into loaves and place in greased loaf tins. Set aside and leave to rise
for 45 minutes.
Preheat the oven to 180C, 350F, Gas Mark 4.
Brush the tops of loaves with the beaten egg and sprinkle with poppy seeds. Bake
for 45-60 minutes. Remove from tins and cool on wire racks.
