Makes 1 x 20cm/8-inch cake   Cold  Vegetarian  Dried Fruit  Nuts Cakes  Teatime Baked fayre  Argentina Sth America  South American



200g/7oz Raisins

1 tbsp Honey

200g/7oz Brown Sugar

240ml/8fl.oz. Water

200g/7of Margarine

300g/11oz Plain Flour mixed with

2 teasp Baking Soda

75g/3oz Chopped Nuts

225g/8oz Crystallized Fruit

Milk to mix




1. Preheat the oven to 180C, 350F, Gas Mark 4 and butter and flour a 20cm/8-inch cake tin. Place the raisins, honey, sugar and water in a large saucepan, bring to the boil and boil for 5 minutes.


2. Remove the pan from the heat and leave to cool a little then add the margarine and mix well.


3. Add the flour and soda mixture,  nuts, fruits and enough milk to make a soft mixture.


4. Pour into the prepared tin and bake for 1 hour.  Allow to cool before serving.

Bake - To cook in an enclosed oven

Beat To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
