120ml/4fl.oz. Red Wine
2 tbsp Granulated Sugar
1/2 teasp Salt
2 tbsp Butter
60ml/2fl.oz. Warm Water
1 small package Cake Yeast
1 teasp Lemon Juice
350g/12oz Plain Flour
Oil for deep frying
Icing sugar for dusting
Soak raisins in the wine for 15 minutes.
Meanwhile. Place the milk in a large saucepan and bring to boiling point. Remove
from the heat, stir in sugar, salt and butter and allow to cool.
In a large bowl, add the yeast to the warm water and stir until the yeast
Stir in the milk mixture, egg, 1/2 of the flour, lemon juice, and drained
raisins and beat until smooth.
Stir in the remaining flour, cover and leave for 1 hour or until double in size.
Heat oil to 180C/350F. Beat the batter down.
Deep fry spoonfuls of dough until golden brown on all sides. Drain on kitchen
paper then dust with icing sugar.
