Oatmeal Drop Biscuits   Veg  CD  CBF  Canadian  30mins

Makes 16-20   Cold Vegetarian Baked Fayre Canada Nth America North American

250g/9oz Self Raising Flour
50g/2oz Butter
A pinch of Salt
100g/4oz Rolled Oats
1 tbsp Sugar
360ml/12fl.oz. Buttermilk
1 Egg White
1 tbsp Water


1. Preheat the oven to 220C, 425F, Gas Mark 7.

2. In a large mixing bowl rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.

3. Add the oats, sugar and salt, mix well then add the buttermilk and briefly mix with a fork until the dry ingredients are moistened.

4. Drop the mixture onto ungreased baking sheets (about 2 tablespoons worth for each biscuit) spacing them well apart.

5. In a small mixing bowl, beat together egg white and water then brush tops of the biscuits with the egg white mixture. Bake for about 10 minutes until golden brown. Best served warm.

Beat To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
