Vegetarian Fruit Cakes Baked fayre
1 Egg, beaten
1 tbsp Baking
1/2 teasp Salt
1/2 teasp Allspice
2 Medium Bananas,
1. Preheat the
oven to 200C, 400C, Gas mark 6 and lightly oil a 12 hole deep muffin tin.
2. In a large
mixing bowl, cream together the butter and brown sugar.
3. Add the egg and
buttermilk and beat well.
4. In another
bowl, mix together the oats, flour, baking powder, salt and allspice. Quickly
the buttermilk mixture - do not over mix - then lightly stir in the bananas.
5. Spoon into the
muffin pan, filling each hole about 2/3rds full and bake for 20 to 25 minutes until golden
