Abernethy Biscuits

Makes approx 12    Cold  Vegetarian  Cookies  Baked Fayre  Teatime Eggless  Scotland  British  Europe



225g/8oz Self Raising Flour

A pinch of salt
100g/4oz Butter

4 tbsp Sugar
1 tbsp Milk  (approx)


1. Preheat the oven to 180C,  350F,  Gas Mark 4 and grease 2 or 3 baking trays.

2. Place the flour and salt in a large mixing bowl and mix well.

3. Rub in butter into the flour using your fingertips until the mixture looks like fine  breadcrumbs then add the sugar and mix well.

4. Stir the milk into the flour mixture and mix to form into stiff dough.

5. Turn the dough onto a lightly floured surface and roll out to 6mm/ inch thick


6.  Using a biscuit cutter, cut into circles then place the rounds on the greased baking trays and bake  for 12-15 minutes until golden brown.

Cool on wire racks.

Key techniques required to make this Recipe

Rubbing in - The incorporation of fat into flour. Butter is softened and cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles fine breadcrumbs in appearance.
