Slovenian Goulash Recipe

3 tbsp Lard or Cooking Oil
900g/2lb Stewing Beef Steak, cubed
1 large Onion, chopped
2 teasp Paprika
1 x 400g/14oz tin Chopped Tomatoes
240ml/8fl.oz. Beef Stock
8 Small Potatoes, peeled and halved
1. Heat the fat in
a large saucepan until very hot, add the meat and onions and sauté,
for a few minutes, turning from time to time, until the meat is
browned on all sides.
2. Add the salt, paprika, tomatoes and stock, mix well, bring to the
boil then reduce the heat, partially cover and simmer gently for
about 1 hour or until the meat is tender
3. Add potatoes and a little extra stock or water if necessary and
continue to cook for a further 30 minutes. Serve hot.
Can be made 24 hours in advance. Allow to cool then cover and
refrigerate until ready to serve. Reheat slowly for at least 30
minutes until piping hot.
Transfer to a freezer proof container and freeze until solid.
Alternatively, divide into portion sizes and freeze. Defrost
thoroughly before reheating as above.
