Peanut Crusted Beef HT
Serves 4 Hot Beef Nuts Main
Course Gluten Wheat Dairy free Eggless
1 tbsp Oil
1.3kg/3lb Sirloin of beef, cut lengthwise into 2 pieces
Salt and Pepper
60ml/2fl.oz. ready made Mustard (check ingredients)
225g/8oz Crunchy Peanut Butter
175g/6oz Roughly Chopped Peanuts
1. Preheat the oven to 200C, 400F, Gas Mark 6. heat the oil in a large frying
pan until very hot then add the meat and sear on all sides. Remove from the pan,
transfer to a roasting tin and season with salt and pepper.
2. In a mixing bowl, mix together the mustard and peanut butter until well
blended then spread on all sides of the beef then sprinkle with chopped peanuts,
pressing them into surface of the beef.
3. Roast in the oven for 25 minutes (rare), 35-40 minutes (medium) or until done
to your taste.
