25g/1oz Lard or 2 tbsp
Olive Oil and 2 tbsp Butter
3 Onions, chopped
675g/1-1/2lb Stewing Beef,
4 Potatoes, thickly
Fresh Beef Stock
240ml/8fl.oz. Sour Cream
2 tbsp Tomato Paste
Ground Black Pepper
3 Tbsp Paprika
2 Bay Leaves
1. Heat the lard (or oil
and butter) in a large saucepan, add the onions and meat and fry until the beef
is browned on all sides and the onion is softened.
2. Add the remaining
ingredients, mix well and bring to the boil then reduce the heat to very low,
cover and simmer for at least 1½ to 2 hours, stirring from time to time.
