225g/8oz Cheshire Cheese, grated
50g/2oz Softened Butter (approx.)
2 tbsp Sweet Sherry
¼ teasp Ground Allspice or Mace
Melted Butter for sealing
1. In a bowl, mix together
the softened butter, cheese and allspice. Add the sherry and mix thoroughly
until well combined.
2. Transfer to individual ramekin dishes and use the base of another
ramekin dish to press the mixture down firmly.
3. Smooth the tops with the back of a wooden spoon then cover each dish
with approximately 6mm/¼ inch of melted butter.
4. Transfer to the refrigerator until the butter has solidified. Serve
