Lemon  Bulgur Wheat Salad

Veg  CD  PIC  ACC  25mins plus standing



Serves   4    Cold  Vegetarian Vegan  Fruit  Herbs  Vegetables  Picnic  Accompaniment   Dairy Free  Eggless 




   100g/4oz Bulgar Wheat

   2 tbsp Lemon Juice

   1 tbsp Olive Oil

   2 Tomatoes, chopped

   75g/3oz Ready to Eat Dried Apricots, chopped

   Freshly Chopped Mint

   Freshly chopped Parsley

   Black Pepper

   4 Spring Onions, finely sliced





1. Place the cracked wheat in a heatproof bowl and add twice its volume of boiling water. Cover tightly and leave for about 20 minutes until the water has been absorbed. Allow to cool a little.


2. Add the lemon juice and oil, season with pepper and mix well then leave for 1 hour or until the cracked wheat has absorbed the dressing and has cooled completely. 


3. To serve - add the tomatoes, apricots, spring onions, parsley and mint just before serving. Blend thoroughly.
