Gourmet Egg Sarnies

Makes 6    Cold   Vegetables Picnic Vegetarian  Tea Time Sandwich




   6 Hard Boiled Eggs, shelled

   2 Sticks of Celery

   1/2 Onion, chopped

   120ml/4fl.oz Mayonnaise

   1 teasp Grated Parmesan Cheese

   Salt and Black Pepper

   3 Firm Tomatoes, sliced

   6 Lettuce Leaves

   12 Slices Bread






1. Place all ingredients apart from the tomatoes, lettuce and bread in a food processor. Pulsate 4 or 5 times until the ingredients are coarsely chopped and mixed.


2. Divide the egg mixture between 6 slices of bread, top with  tomato slices and a  lettuce leaf. Top each with a slice of bread pressing relatively firmly, then cut into quarters.


3. Cover with clingfilm and refrigerate until ready to serve.

Tips, Options and Substitutions


You can use brown or white bread however for a genteel sandwich, use bread which doesn't have bits or seeds in it and keep the slices quite thin

There's no need to butter the bread
