Chickpea Burgers



Veg HT BBQ MC 30 mins plus chilling

Serves 4

50g/2oz Hazelnuts
150g/5oz Cooked Chickpeas
1 small Onion, finely chopped
50g/2oz Carrot, grated
1 Garlic Clove, crushed
1 tbsp Olive Oil
50g/2oz Cheddar Cheese, grated
25g/1oz Wholemeal Breadcrumbs
1 Egg, beaten
1 teasp Dried Mixed Herbs
1 teasp Tahini
Salt and Cayenne Pepper



1. Place the nuts and chickpeas in a food processor and process until smooth.

2. Heat the oil in a pan, add the onion, carrot and garlic and sauté until soft. Remove from the heat.

3. Add all the remaining ingredients to the onion mixture  and mix thoroughly until the mixture is well blended. Chill in the fridge for 1 hour.

4. Lightly oil a baking sheet, and place on the barbecue until hot. Divide the mixture into 4, roll into balls then flatten into burgers. Chill for at least two hours.

5. Cook the burgers on the pre-heated baking sheet for approximately 20 minutes, turning once.

6. Serve in buns garnished with shredded lettuce and sliced tomatoes.


Tips, Options and Substitutions


Using a hamburger press as shown on the left, cuts down on the amount of time it takes to make each burger and ensures all your burgers are the same size and so cook at the same time
