Blue Cheese Burgers

Ingredients

400g/14oz Minced Beef
1 teasp Dried Tarragon
1 teasp Dried Parsley
Salt and Pepper
100g/4oz Blue Cheese
Vegetable Oil
 

Instructions

 

1. In a large mixing bowl, mix together the beef, tarragon, parsley, salt and pepper.

2. Form mixture into eight balls then turn onto a floured surface and flatten each ball to make a round about 1cm/1/2 inch thick.
 

 

3. Cut the cheese into four equal pieces. Crumble one piece of cheese in the centre of one round of meat then cover with a second round of meat. Seal the edges well to enclose the cheese. Repeat the process with the remaining ingredients.
 
4. Brush with a little oil then cook over hot coals for a total of 13-15 minutes turning 3 or 4 times brushing with oil before turning, until thoroughly cooked through.

Tips, Options and Substitutions

 

Use any blue cheese you have to hand such as Danish Blue or Stilton

substitute the tarragon with thyme

Using a hamburger press as shown on the left, cuts down on the amount of time it takes to make each burger and ensures all your burgers are the same size and so cook at the same time
