Wash the parsley sprigs in cold water and dry thoroughly with a soft cloth. Heat
the oil in a frying pan to 170C, 325F.
Drop in the sprigs, a few at a time, and let them cook for about 3 minutes,
turning once. They will frizzle and turn a bright green. Lift out, drain on
paper towels, and serve as soon as possible while they are still very crisp and
the fried parsley as a garnish to savoury dishes.
