Thyme Pesto Recipe

Serves 4 Cold Vegetarian Herbs
Accompaniment Savoury Sauce Italy Mediterranean

tbsp freshly chopped Parsley
tbsp fresh Thyme Leaves
freshly grated Parmesan Cheese
tbsp toasted Pine Nuts
Place the parsley, thyme, cheese, pine nuts and garlic in a food processor and
process until finely chopped and well mixed.
With the machine still running, gradually add the olive oil and continue to
process until the pesto is almost smooth.
Transfer to a bowl, cover and refrigerate until ready to use.
Thyme Pesto is very
good served over vegetables or pasta.
