Sinhalese Toasted Curry Powder Recipe

6 tbsp Coriander Seeds
2 tbsp Cumin Seeds
1 teasp Fennel Seeds
1 x 5cm/2-inch Cinnamon Stick
4 Whole Cloves
4 Cardamom Seeds
5 Dried Curry Leaves
2 dried Red Chillies
1 teasp Black Peppercorns
1 tbsp Long Grain Rice (uncooked)


1. Place all the ingredients in a dry small frying pan and toast over low heat for a few minutes, stirring constantly. The rice should be fairly brown but de careful not to burn the spices.

2. Transfer the mixture to a small food processor or grinder and process to a fine powder.
