Mint Sambol Recipe

Serves 4-6    Cold Vegetarian Vegan Vegetables Herbs Accompaniment Curry   Gluten Wheat Dairy Free Eggless   Sri Lanka Ceylon Ceylonese Asia Asian

Ingredients
3 Green Chillies, deseeded
2 Garlic Cloves
2.5cm/1 inch Fresh Root Ginger, chopped
2 Onions, roughly chopped
3 tbsp Mint Leaves
2 teasp Sugar
75g/3oz Freshly Grated Coconut
Lime Juice and Salt to taste

Instructions

1. Place all the ingredients in a food processor and process to a paste.

 

Serve the mint sambol at room temperature as an accompaniment to curries.
